Snack Supper in a Flash!

Saturday was, as usual, a busy day around our house.  I was continuing to sew the prom dress (almost finished, finally).

SuperDave was continuing the side yard project on his own until I'm finished with my sewing project and can give him a hand.


 So in his outdoor comings and goings Saturday afternoon SD visited with our neighbors. And as we love to do, especially with the arrival of patio weather, he invited them over for an impromptu gathering at the end of the day.  Then he came in the house and told me that we were having guests over at 7 pm.

I was a little panicked at first, then excited, because I love hanging out in the backyard with our friends.  Plus, I probably would have still been sewing at 7 if he hadn't planned a get together. Now I had to quit and make myself and the house presentable.

There weren't enough hours left in my day to

  • finish sewing
  • cook dinner and clean up the kitchen
  • touch up the house
  • make myself presentable
 My solution was to grab some stuff from the fridge and throw together and quick snack supper that we could eat as our dinner and share with friends.

Item number one, Hummas Dip and Pita Chips.

I got this simple idea from a friend, Gina, who copied it from a restaurant. Just spread the hummas on a plate and top with sun dried tomatoes, pitted kalamata olives and sweet italian garlic cloves.  This dip is so yummy my friend, Anne, thought I had made my own hummas!

Next the old standby - a plate of Raw Veggies and Dip. I had carrots, broccoli, celery, grape tomatoes and red bell pepper in the fridge.   I like to mix 1 tablespoon of blue cheese dressing into the ranch dressing for a little extra kick in the dip.  If I'm making for a larger crowd I usually just make two dishes, one blue cheese and one ranch.  I tape a toothpick to the side of the dish and tape a little sign to the toothpick with the names of the dip so folks get the one they prefer.

Texas Caviar and Tortilla Chips - I add a little medium salsa to the Texas Caviar to give it a little kick.  If you are sensing a theme here, yes, I like a little LOT of flavor and I like spicy!

Finally I sliced up some Cheese and Smoked Sausage, added a few Crackers and a small dish of dijon mustard.

Our snack supper was complete and it took longer to eat than it did to prepare. How often can you say that about supper?  I mean really?

Fortunately, one of my friends offered to bring a dessert - so were ALL SET with a snack supper for six! 


I'd love to show you a picture of the desserts, but by the time we brought out the sweets we were relaxing on the patio and we just gobbled them up before I even thought of taking a picture.

Absolutely! The great thing about close friends is that you don't have to try to impress them. Simple is good.

Thanks, it's coming along, we just need about 2 MORE tons of crushed granite and there's no easy way to get it around there.
