Let Them Eat (Cream Cheese Pound) Cake

Some foods are good any time of the day, breakfast, lunch, dinner, or for a snack. 

Some of these foods (in my opinion) are:

Pecans
Watermelon
Strawberries
Pineapple
Cherry Tomatoes
Salsa and Chips
Pizza
Kettle Potato Chips

AND

CREAM CHEESE POUND CAKE - Oh yes, we eat this cake around the clock whenever I fall into temptation and can't resist the buttery goodness for another day.  We're lucky if there is any left for breakfast but if there is....it is divine with a cup of coffee or hot tea.

This easy cake recipe was given to me by a friend many moons ago who was an awesome cook.  She later left her job as a petroleum engineer to  open a catering business.  It is probably the cake I have made the most times in my life.  

I'm not a big fan of cake all covered with frosting, I'm more of a cookie monster gal.  But pound cake is so good and so versatile - you can eat it any time of day.  You can eat it WITH strawberries and whip cream and ice cream, covered with raspberry sauce.....


My son once confused flour and powdered sugar while baking cookies so he marked all my canisters for me ;)
 Becky's Cream Cheese Pound Cake

Cream together
8 oz softened cream cheese
3 sticks softened butter - the real stuff NO margarine


Add slowly, mixing constantly
3 cups granulated sugar
6 eggs




After well mixed mixed, add
3 cups all purpose flour
1-1/4 tsp baking powder
1/2 tsp salt
2 tsp real vanilla
1 tsp almond extract (opt)  this is my addition I love almond!

After well mixed pour into greased tube or bundt pan.  Bake at 325 degrees for 1-1/2 hours or until a toothpick inserted in the middle comes out clean.  (or two loaf pans)



When the whole house started to smell wonderful I couldn't resist a peak, disregard any debris on the bottom of my oven, it is used often.  I wish you could smell it.



Finally it was done!  I used loaf pans since it was a week night and we wanted to eat it.  The small one was done in one hour.  The larger pan took closer to one and one half hours.
